  • 3 Bun’n’Rolls
  • Lemon curd
  • 4 lemons
  • 1 egg
  • 3 egg yolks
  • 150g sugar
  • 15g corn flour
  • Italian Meringue
  • 100g of water
  • 150g sugar
  • 3 egg whites

  • Zest and juice the lemons.
  • Mix the lemon juice and zest with the dry ingredients, then add the egg yolks and one whole egg.
  • Cook over a medium heat, stirring constantly, until thickened and smooth. 
  • For the meringue : Pour the water in the pot, add the sugar. Bring the mix to 118°C.
  • In a separate bowl; slightly whip the egg whites before adding the hot sugar syrup.
  • Mix the meringue until it is cools to room temperature.
  • Fill the Bun of lemon curd.
  • Top the bun with the meringue when it is ready. Caramelize the Meringue with a blowtorch, then Enjoy !
